I love, love coconut...and lemon. But this time coconut won out. I made a coconut cake for Sarah's first bridal shower. My friend Cristy had made it before and passed the recipe on to me. Pretty simple and easy to make and tastes delish! yum!
I used two vanilla cake mixes and added 4 teaspoons of coconut extract to the batter. I ended up making three 9" round cakes...extravagent, I know. The frosting was particularly fattening with 2 pkgs of cream cheese, 3 sticks of butter, about 4 cups of powdered sugar and toasted coconut - so good, but so sweet - so I added unsweetened coconut flakes to the outside...looked pretty too!
